Ingredients

  • 8–12 (deseeded for milder) Fresh green chilies (serrano or jalapeño)
  • 1 large bunch Fresh cilantro
  • ½ bunch Fresh parsley
  • 6–8 cloves Garlic
  • 2 tsp Ground cumin
  • 1 tsp Ground coriander
  • 4 tbsp Lemon juice
  • 80 ml Olive oil
  • 1–2 tsp Salt

Method

  1. In food processor: add chilies, cilantro, parsley, garlic, cumin, coriander, salt → pulse to coarse paste.
  2. Add lemon juice → pulse again.
  3. With processor running, slowly drizzle in olive oil → blend until emulsified but still textured.
  4. Taste & adjust: more salt, more lemon for brightness, more chilies for heat.
  5. Transfer to jar → top with thin oil layer → refrigerate up to 2 weeks.
  6. Serve with falafel, grilled meats, flatbread, eggs — fiery, herby Yemeni zhug sauce.
