Ingredients
- 300 g Honey (preferably Madeira)
- 500 g Plain flour
- 150 g Sugar
- 4 Eggs
- 150 g Butter (melted)
- 1 tbsp Baking powder
- 2 tsp Mixed spice (cinnamon, cloves, anise)
- 100 g chopped Candied peel and nuts (optional)
Method
- Preheat oven to 160°C. Grease and line a deep 23 cm round cake tin. In a large bowl whisk eggs with sugar until pale and fluffy (about 3-4 minutes). Gradually add melted butter and honey, whisking continuously until smooth and well combined.
- Sift together flour, baking powder, and mixed spices. Fold dry ingredients into the wet mixture in three additions, mixing gently until just combined. If using, fold in chopped candied peel and nuts. The batter will be thick and sticky.
- Pour batter into prepared tin and smooth the top. Bake for 60-75 minutes or until a skewer inserted in the center comes out clean (cover with foil after 40 minutes if browning too quickly). Cool completely in the tin before turning out. This cake improves with age - wrap tightly and store 2-3 days before serving for best flavor. Dust with icing sugar or serve plain.
