Ingredients

  • 500 g Red kidney beans (soaked overnight)
  • 300 g Pork ribs or bacon
  • 200 g Chouriço sausage (sliced)
  • 700 g Potatoes (cubed)
  • 300 g Cabbage (shredded)
  • 3 Carrots (sliced)
  • 1 large Onion (chopped)
  • 40 ml Olive oil

Method

  1. In large pot place soaked beans, pork, chouriço, onion and enough water to cover generously. Bring to boil, skim foam, reduce to simmer and cook 1 hour.
  2. Add potatoes, carrots and cabbage. Continue simmering 45-60 minutes until beans are completely tender and stew thickens naturally.
  3. Remove meats if desired, slice and return to pot. Season to taste. Serve very hot. Traditional presentation includes placing a clean stone in the pot while cooking (remove before serving).
