Ingredients
- 200g, sliced Fish cakes
- 2 tbsp Laksa paste
- 1 cup Coconut milk
- 1/2 cup Water
- 1 cup Bean sprouts
- 2, peeled Hard-boiled eggs
- 1, juiced Lime
- 2 tbsp, chopped Coriander
- 1 tsp Red chili flakes
- 1 tsp Salt
Method
- In a medium saucepan, combine coconut milk, water, and laksa paste, whisking until the paste is fully dissolved, then bring to a gentle simmer over medium heat, 3 minutes.
- Add the sliced fish cakes to the sauce, letting them cook for 4–5 minutes until heated through, stirring gently to prevent sticking.
- Reduce heat to low, then fold in bean sprouts, hard-boiled eggs, and red chili flakes, simmering for an additional 2 minutes until the sprouts are crisp-tender.
- Taste the broth, adding salt as needed, then remove from heat.
- Transfer the laksa mixture into a shallow dish, arranging the fish cakes and eggs neatly on top.
- Drizzle the remaining broth over the fish cakes, ensuring each bite is moist and flavorful.
- Squeeze fresh lime juice over the dish, then sprinkle chopped coriander for a burst of freshness.
- Serve the laksa bites warm with a side of rice crackers or a small portion of steamed rice for a comforting snack.
- Adjust the spice by offering extra lime wedges or a mild dipping sauce, making it suitable for children.
