Ingredients
- 2 tbsp Laksa paste
- 200 ml Coconut milk
- 200 g Chicken breast, diced
- 1 tsp Fish sauce, low sodium
- 1 tsp Tamarind paste
- 1 cup Bean sprouts
- 1 tbsp Fresh coriander, chopped
- 200 g Rice noodles, pre-soaked
- 1 tbsp Vegetable oil
- 500 ml Water
Method
- Heat the oil in a deep saucepan over medium heat until shimmering, about 30 seconds, then add the laksa paste and sauté, stirring constantly, until fragrant, about 2 minutes.
- Add the coconut milk and water, bring the mixture to a gentle boil, then reduce the heat to a simmer, letting it cook for 5 minutes to allow the flavors to meld.
- Introduce the diced chicken breast, tamarind paste, and fish sauce, simmering for another 8 minutes until the chicken is cooked through and the broth has thickened slightly.
- Stir in the pre-soaked rice noodles and continue to simmer, 3–4 minutes, until the noodles are tender yet still slightly firm.
- Fold in the bean sprouts and chopped coriander, cooking just until the sprouts wilt, about 1 minute, and adjust seasoning with a pinch of salt if needed.
- Serve the laksa hot, garnished with additional coriander and a squeeze of lime, ensuring each bowl has an even distribution of noodles, chicken, and broth.
