Ingredients

  • 2 cups Flour
  • 1 cup Warm Water
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 tsp Sugar
  • 1 tsp Active Dry Yeast
  • 2 Egg Yolks
  • 1 cup Sour Cream
  • 1/2 cup Butter
  • 1/2 cup Onion
  • 3 cloves Garlic

Method

  1. Heat butter in a large skillet over medium-high heat until melted, about 2 minutes, then add onion and cook, stirring occasionally, until caramelized, 8-10 minutes.
  2. Add garlic to the skillet and cook, stirring constantly, until fragrant, about 30 seconds.
  3. In a large mixing bowl, combine flour, salt, black pepper, and sugar. Add warm water and mix until a shaggy dough forms.
  4. Knead the dough on a floured surface for 10 minutes, until smooth and elastic.
  5. Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place until doubled in size, about 1 hour.
  6. Preheat oil in a deep frying pan to 350°F.
  7. Punch down the dough and divide into 8 equal pieces. Roll each piece into a ball and then flatten slightly into a disk shape.
  8. Heat the oil in the skillet to 350°F. Fry the pampushky in batches until golden brown, about 2-3 minutes per side.
  9. Drain the pampushky on paper towels and serve warm.
