Ingredients
- 300g Gluten-free rolled oats
- 100g Almond flour
- 120g Honey or maple syrup
- 80g Coconut oil (melted)
- 50g Brown sugar
- 1 tsp Baking powder
- 1/2 tsp Salt
- 1 tsp Vanilla extract
- 100g Dried cranberries or raisins
- 80g Chopped nuts (optional)
Method
- Preheat oven to 175°C. Line a 23x33cm baking pan with parchment paper, leaving overhang for easy removal.
- In a large bowl, mix gluten-free rolled oats, almond flour, baking powder, and salt.
- In a separate bowl, whisk together honey (or maple syrup), melted coconut oil, brown sugar, and vanilla extract until smooth.
- Pour the wet mixture over the dry ingredients. Add dried fruit and nuts (if using). Stir until everything is evenly coated and sticky.
- Press the mixture firmly and evenly into the prepared pan using the back of a spoon or your hands (wet your hands slightly to prevent sticking).
- Bake for 22-28 minutes until the edges are golden brown and the top feels firm.
- Remove from oven and let cool completely in the pan (at least 1 hour) to set. Cut into 12-16 bars.
- Store in an airtight container at room temperature for up to 2 weeks.
