Ingredients
- 4 Large fresh eggs
- 1–2 tbsp Butter or neutral oil
- to taste Salt & black pepper
Method
- Heat a non-stick or cast-iron skillet over medium-low heat → add butter/oil and let it melt/heat until shimmering but not smoking.
- Crack eggs directly into pan (or crack into small bowl first then slide in to keep yolks intact).
- Cook undisturbed 2½–3 minutes until whites are mostly set and edges start to curl slightly.
- Gently slide a thin spatula under each egg → flip carefully (yolk should not break).
- Cook on second side for 60–90 seconds → yolk should be partially set (jammy in center, not runny on top but not hard).
- Season with salt & pepper → slide onto plate immediately.
- Yolk should be thick but still soft when cut — ideal for burgers, toast, hash, or rice bowls.
