Ingredients
- 4 pieces (about 200 g) Hanpen (fish cake)
- 3–4 Large eggs
- 1–2 tsp Soy sauce
- 1 tsp (optional) Mirin
- 1–2 tbsp Neutral oil
- 1 tbsp (optional garnish) Green onion (finely sliced)
Method
- Cut hanpen into bite-size triangles or squares if desired (they are usually already portioned).
- Heat oil in a non-stick pan over medium heat → add hanpen pieces → fry 2–3 minutes per side until both sides are lightly golden and slightly crispy.
- Push hanpen to one side of the pan → crack eggs directly into the empty space → season eggs lightly with a tiny pinch of salt.
- Cook eggs to your liking (sunny-side up, over-easy, or scramble them around the hanpen).
- When eggs are almost set, drizzle soy sauce + mirin (if using) over everything → let bubble 20–30 seconds.
- Slide everything onto a plate → garnish with sliced green onion if desired.
- Serve hot — simple, comforting Japanese fish-cake & egg pan dish.
