Ingredients
- 1 cup Rolled oats
- 1 cup Plant-based milk
- 1/2 cup Grated apple
- 1 tsp Cinnamon
- 1 tsp Vanilla extract
- 2 tbsp Maple syrup
- 2 tbsp Chia seeds
Method
- In a large bowl, combine the oats, plant-based milk, grated apple, cinnamon, and vanilla extract, stirring until well combined.
- Cover the bowl with a lid or plastic wrap and refrigerate overnight, for at least 8 hours, until the oats have absorbed most of the liquid and the mixture has a creamy consistency.
- In the morning, stir in the maple syrup and chia seeds, until well combined and the chia seeds are evenly distributed.
- Spoon the oat mixture into a serving dish or jar, about 1 cup per serving, and top with additional grated apple and cinnamon if desired.
- Serve the Apfelstrudel Overnight Oats chilled, straight from the refrigerator, about 30 minutes to 1 hour before serving.
- If desired, heat the oats in the microwave or on the stovetop, stirring occasionally, until warmed through, about 1-2 minutes.
- Garnish with additional cinnamon and a drizzle of maple syrup, if desired, and serve immediately.
