Ingredients
- 2 cups Durum wheat flour
- 1 cup Water
- 2 tbsp Ghee or oil
- 2 cups Lamb or beef broth
- 1 large Onion
- 1 tsp Spices
- to taste Salt
Method
- Combine the durum wheat flour and water in a bowl, and stir until a dough forms, then knead the dough for 10 minutes until smooth and elastic, and shape into a round or oval shape.
- Heat the ghee or oil in a large pot over medium heat, then add the onion and cook stirring occasionally until softened, about 5 minutes, then add the lamb or beef broth and bring to a boil.
- Reduce the heat to low and simmer, covered, for 20 minutes, then add the dough to the pot and cook for an additional 10-15 minutes, until the bread is cooked through and the stew is hot and bubbly.
- Stir the stew occasionally as it simmers, and adjust the seasoning as needed, adding salt and spices to taste, then serve the asida hot, garnished with fresh parsley or cilantro, and enjoy with the flavorful stew.
- To make the stew more flavorful, consider adding other ingredients such as garlic, ginger, or cumin, and adjust the amount of broth to achieve the desired consistency.
- Asida is a traditional Libyan dish, often served on special occasions, and can be made with a variety of ingredients, including meat, vegetables, and spices, so feel free to experiment and find your favorite combination.
