Ingredients

  • 1.5 lbs boneless chicken breast
  • 1 cup basmati rice
  • 2 tbsp ghee
  • 1 medium onion
  • 1 inch ginger
  • 2 cloves garlic
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 0.5 tsp cayenne pepper

Method

  1. Heat ghee in a large skillet over medium-high until shimmering, about 2 minutes, then add onion and cook until translucent, about 3–4 minutes.
  2. Add ginger and garlic to skillet and cook until fragrant, about 1 minute, then add cumin, coriander, and cayenne pepper and cook for 1 minute, stirring constantly.
  3. Add garam masala, salt, and black pepper to skillet and cook for 1 minute, stirring constantly, then add chicken to skillet and cook until browned on all sides, about 6–8 minutes.
  4. Add basmati rice to skillet and stir to combine with chicken and spices, then add 2 cups of water to skillet and bring to a boil.
  5. Reduce heat to low, cover skillet with a tight-fitting lid, and simmer until rice is cooked and liquid has been absorbed, about 15–20 minutes.
  6. Fluff biryani with a fork and serve hot, garnished with chopped cilantro and a dollop of raita if desired.
