Ingredients

  • 100 g Cornstarch
  • 400 ml Water
  • 300 g Sugar
  • 1 tsp (acid to prevent crystallization) Cream of tartar or lemon juice
  • 1 tsp Vanilla extract (optional)

Method

  1. Mix cornstarch with 100 ml cold water to make smooth slurry (no lumps).
  2. In large saucepan, combine sugar + remaining 300 ml water + cream of tartar/lemon juice → heat over medium → stir until sugar dissolves.
  3. Bring to boil → reduce to medium-low → simmer 5–7 minutes until syrup reaches 110–112 °C (soft-ball stage).
  4. Slowly whisk in cornstarch slurry → mixture will thicken quickly → continue stirring 2–3 minutes until clear and thick.
  5. Remove from heat → stir in vanilla if using → cool slightly.
  6. Pour into clean glass jar → cool completely → seal.
  7. Store in refrigerator up to 2 months (stir before use if separated).
  8. Use in candy-making, frostings, or as corn syrup substitute — clear, thick homemade corn syrup.
