Ingredients

  • 1½ scoops (~45g) Unflavored whey isolate
  • 6 large Egg whites
  • ⅓ cup (~35g) Almond flour
  • 120g A5 Wagyu beef (finely minced)
  • 3–4 cloves Black garlic (pureed or finely chopped)
  • 1 tsp Baking powder
  • 3–4 tbsp Unsweetened almond milk
  • 1 tsp Fresh thyme leaves
  • to taste Salt + cracked black pepper
  • for garnish Microgreens or edible flowers

Method

  1. Whip egg whites to stiff peaks. Set aside.
  2. In a bowl, gently mix almond flour, protein powder, baking powder, salt and pepper. Add almond milk and pureed black garlic to form a thick batter.
  3. Fold in ⅓ of egg whites to lighten, then fold in remaining whites gently.
  4. Quickly sear minced A5 Wagyu in a hot pan 30–60 seconds (keep rare/medium-rare), season with salt/pepper and thyme. Remove and fold half into batter.
  5. Heat non-stick pan on medium-low. Lightly grease.
  6. Scoop ~⅓ cup batter per pancake. Cook 2½–3½ minutes per side until golden.
  7. Top with remaining seared wagyu, extra black garlic shavings, microgreens, and optional truffle oil drizzle.
  8. Serve as a luxurious savory brunch stack.
