Ingredients
- 100g dry Soy protein noodles
- 150g Canned tuna in water (drained)
- 1 ripe, mashed Avocado
- 1 tbsp Lemon juice
- 1/4 cup Greek yogurt (non-fat)
- 1/2 cup halved Cherry tomatoes
- to taste Salt + black pepper + chili flakes
Method
- Cook soy noodles in boiling salted water for 5–7 minutes until al dente. Drain and rinse under cold water for a cold pasta salad (or keep warm).
- In a bowl, mash avocado with lemon juice, Greek yogurt, salt, pepper, and a pinch of chili flakes until smooth and creamy.
- Flake drained tuna and add to the avocado mixture along with halved cherry tomatoes.
- Add cooked noodles (cooled or warm). Toss gently to coat everything in the avocado-yogurt sauce.
- Serve chilled (as salad) or warm. Garnish with extra black pepper if desired.
