Ingredients
- 1 cup Gluten-free flour
- 1/2 cup Sugar
- 2 tbsp Egg replacement
- 1 cup Almond milk
- 1/4 cup Butter replacement
- 1 cup Fresh fruit
- 1/2 cup Chopped nuts
Method
- In a large bowl, whisk together gluten-free flour, sugar, and egg replacement, then add almond milk and mix until smooth, the batter should still be slightly lumpy.
- Heat butter replacement in a non-stick skillet over medium heat until melted, about 1 minute, then pour into the bowl and mix well.
- The batter should now be thin and free of lumps, if necessary, add a little more almond milk to achieve the right consistency.
- Heat a small non-stick pan over medium heat, then pour in just enough batter to coat the bottom of the pan, about 1/4 cup, tilt the pan to evenly coat the bottom.
- Cook the crepe for 1-2 minutes, until the bottom is lightly browned, then loosen with a spatula and flip, cook for an additional 30 seconds to 1 minute, until the other side is lightly browned.
- Repeat the process until all the batter is used up, then fill the crepes with fresh fruit and chopped nuts, the crepes should be delicate and slightly sweet with a nice crunch from the nuts.
