Ingredients
- 1½ scoops (~45g) Vanilla whey protein powder
- 5 large Egg whites
- 1 Egg (whole)
- ½ cup (~60g) Oat flour or gluten-free flour
- ¾ cup Unsweetened almond milk
- zest of 1 orange Orange zest
- ¼ cup Orange juice (fresh)
- 1 tsp Grand Marnier or orange extract (non-alcoholic)
- ½ tsp Baking powder
- pinch Salt
Method
- In a blender, combine protein powder, oat flour, whole egg, egg whites, almond milk, orange zest, orange juice, orange extract, baking powder, and salt. Blend until completely smooth.
- Let batter rest 15–30 minutes (crêpe batter improves with rest).
- Heat a non-stick crêpe pan or skillet over medium heat. Lightly grease.
- Pour ~¼ cup batter, swirl pan to make thin, even layer. Cook 1–2 minutes until edges lift and bottom is golden.
- Flip and cook 30–60 seconds more.
- Repeat with remaining batter (makes 6–8 thin crêpes).
- For Suzette flair: In a pan, warm sugar-free orange syrup or fresh orange juice + zest. Add crêpes one at a time, fold into quarters, and baste in sauce.
- Serve folded or rolled, with extra sauce and optional orange segments.
