Ingredients
- 2 cups Flour
- 1/4 cup Lard
- 1 lb Chicken breast
- 1 large Onion
- 3 cloves Garlic
- 1 cup Queso fresco
- 1/4 cup Cilantro
- 1 tsp Salt
Method
- Combine flour and lard in a bowl, stirring to form a dough, then knead for 5-10 minutes until smooth and pliable.
- Divide dough into 4-6 equal pieces, depending on desired size, then roll each piece into a ball and flatten slightly into a disk shape.
- Heat a dry griddle or skillet over medium-high heat, then cook empanadas for 30-45 seconds on each side, until lightly browned and slightly puffed.
- While empanadas are cooking, cook chicken breast in a separate skillet, breaking up with a spoon as it cooks, until browned and cooked through, about 5-7 minutes.
- Assemble empanadas by placing a spoonful of chicken onto each empanada, then topping with onion, garlic, queso fresco, and cilantro.
- Serve immediately, garnished with additional cilantro and salsa if desired.
- For an extra crispy empanada, cook in a skillet with a small amount of oil until golden-brown and crunchy, about 2-3 minutes per side.
- To make ahead, prepare empanadas and refrigerate or freeze until ready to cook, then proceed with recipe as directed.
