Ingredients
- 1 can Canned Tuna
- 4 cups Mixed Greens
- 2 cups Cherry Tomatoes
- 1 cup Red Onion
- 1/4 cup Cilantro
- 2 tbsp Lime Juice
- 1 tbsp Olive Oil
- 1/4 cup Diced Jalapeño
Method
- Drain the liquid from the canned tuna and flake it into a large bowl, making sure to remove any large chunks or bones.
- Add mixed greens, cherry tomatoes, and cilantro to the bowl and toss to combine, making sure all ingredients are well coated with the tuna.
- Heat oil in a small skillet over medium heat, about 300°F, then add diced red onion and cook stirring occasionally until translucent, 4-6 minutes.
- Add the cooked onion to the bowl and toss to combine, making sure all ingredients are well coated with the onion and oil mixture.
- In a small bowl, whisk together lime juice and a pinch of salt, then pour over the salad and toss to coat.
- Season with salt and pepper to taste, then garnish with diced jalapeño and serve immediately, this will add a spicy kick to the salad.
- Let the salad rest for 10-15 minutes to allow the flavors to meld together before serving, this will help the ingredients to combine and the flavors to develop.
