Ingredients
- 125 g All-purpose flour
- 2 Large eggs
- 300 ml Milk
- 200 ml Water
- 2 tbsp Butter (melted)
- pinch Salt
- 1 tbsp Sugar (optional for sweet crepes)
Method
- In bowl whisk flour + salt + optional sugar → make well in center → add eggs → whisk until smooth.
- Gradually add milk + water while whisking → stir in melted butter → mix until batter is thin and lump-free (strain if needed).
- Cover → rest batter at room temperature 30–60 minutes (or refrigerate overnight for better texture).
- Heat non-stick crepe pan or skillet over medium-high → add tiny pat butter or oil → swirl to coat.
- Pour ¼ cup batter into pan → tilt/swirl immediately to spread thin even circle (≈20–25 cm diameter).
- Cook 1–2 minutes until edges curl and bottom is golden → flip carefully with spatula → cook 30–60 seconds more.
- Stack cooked crepes on plate → cover with towel to keep warm (makes 10–12 crepes).
- Fill with sweet (jam, Nutella, fruit) or savory (ham, cheese, spinach) fillings — thin, delicate homemade crepes.
