Ingredients
- 4 pieces Injera bread
- 2 medium Onion
- 3 cloves Garlic
- 1-inch piece Ginger
- 2 tbsp Berbere spice
- 1 can Tomato
- 1/4 cup Vegetable oil
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Method
- Tear injera bread into small pieces and soak in water for at least 30 minutes, then drain and set aside.
- Heat oil in a large skillet over medium until shimmering, about 2 minutes, then add onion and cook stirring occasionally until translucent, 4-5 minutes.
- Add garlic and ginger to the skillet and cook for 1 minute, stirring constantly, until fragrant.
- Add berbere spice to the skillet and cook for 1 minute, stirring constantly, until fragrant.
- Add tomato, salt, and black pepper to the skillet and stir to combine, then bring to a simmer.
- Add the soaked injera bread to the skillet and stir to combine, then cook for 5-7 minutes, stirring constantly, until the bread is well coated with the sauce.
- Use a spatula to press the mixture down into the skillet and cook for an additional 2-3 minutes, until the bottom is crispy and golden-brown, then serve hot.
