Ingredients
- 1 pound Chicken breast
- 2 tbsp Butter
- 1 large Onion
- 2 large Leek
- 3 cloves Garlic
- 1 cup Cream
- 2 large Eggs
- 1/2 tsp Salt
- 1/2 tsp Pepper
Method
- Melt butter in a large pot over medium heat, about 2 minutes, until foamy, then add onion, leek, and garlic and cook stirring occasionally until softened, 8-10 minutes.
- Add the chicken to the pot and cook, stirring occasionally, until browned on all sides and cooked through, 5-7 minutes.
- In a small bowl, whisk together cream, eggs, salt, and pepper, then pour the mixture over the chicken and vegetables in the pot.
- Stir the mixture gently to combine, being careful not to break up the chicken, then reduce heat to low and simmer, covered, until the sauce has thickened and the chicken is heated through, 10-12 minutes.
- Taste and adjust the seasoning as needed, then serve the waterzooi hot, garnished with chopped fresh herbs if desired.
- Repeat the process with the remaining ingredients, if necessary, to ensure all the chicken is cooked and the sauce is thickened.
- Let the waterzooi cool to room temperature, then refrigerate or freeze for later use, reheating gently over low heat when needed.
