Ingredients

  • 40 liters (yields ≈1 liter finished syrup) Fresh maple tree sap
  • to cool final stages Optional: clean snow or ice (for outdoor boiling)

Method

  1. Collect fresh sap from sugar maple trees in late winter/early spring (sap must be clear & sweet — cloudy sap is unusable). Store sap refrigerated max 2–3 days.
  2. Filter sap through cheesecloth to remove debris.
  3. Pour sap into large wide shallow pot (outdoor propane burner or wood fire recommended — indoor stovetop is impractical for large volumes).
  4. Bring to boil → maintain rolling boil → skim foam occasionally → add more sap as volume reduces (continuous feed method).
  5. Boil until temperature reaches 104 °C (219 °F) or syrup coats spoon and spins a 2-inch thread when dropped (takes 8–12 hours depending on sap sugar content).
  6. Final stage: boil in smaller pot indoors → watch closely (syrup can scorch or boil over).
  7. Test: drop syrup into cold water → it should form soft ball → or use hydrometer (66–67° Brix).
  8. Filter hot syrup through coffee filter or cheesecloth to remove sugar sand/niter.
  9. Bottle hot in sterilized glass jars → seal → cool upside down.
  10. Store in cool dark place up to 1 year (refrigerate after opening) — pure, golden maple syrup from scratch.
