Ingredients
- 1 lb Beef
- 1/2 lb Pork
- 1 large Onion
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 tsp Coriander
- 1/2 tsp Nutmeg
- 2 tbsp Butter
Method
- In a large bowl, combine the beef, pork, onion, salt, pepper, coriander, and nutmeg, mixing until just combined, being careful not to overmix.
- Use your hands to shape the mixture into a long, thin sausage shape, about 1 inch in diameter, then wrap it in plastic wrap and refrigerate for at least 30 minutes, until firm.
- Heat the butter in a large skillet over medium-high heat, about 2-3 minutes, until melted and foamy, then add the ossenworst and cook for 5-7 minutes, until browned and crispy on the bottom.
- Flip the ossenworst and cook for another 5-7 minutes, until cooked through and browned on the other side, then serve hot with your favorite toppings or sides.
- Repeat the process until all the mixture is used up, about 4-6 ossenworst, then let them cool on a wire rack for 5 minutes.
- Assemble the ossenworst by slicing it thinly and serving on a bun, topping with mustard and pickles, and serving immediately.
