Ingredients
- 240 ml Sour orange juice (or ½ orange + ½ lime juice)
- 10–12 cloves (minced or crushed) Garlic
- 120 ml Olive oil
- 2 tsp Oregano (dried)
- 1 tsp Cumin
- 2 tsp Salt
- ½ tsp Black pepper
- ½ small Optional: onion (finely diced)
Method
- In bowl whisk sour orange juice + minced garlic + oregano + cumin + salt + black pepper.
- Slowly drizzle in olive oil while whisking vigorously to emulsify.
- Add optional diced onion → stir.
- Taste & adjust: more salt, more cumin, more citrus for brightness.
- Let sit at least 30 minutes (or overnight in fridge) for flavors to meld.
- Use as marinade for pork (lechón), chicken, seafood, or as table sauce/dip.
- Store refrigerated up to 1 week — shake before use — classic Cuban citrus-garlic mojo criollo.
