Ingredients
- 2 cups Gluten-free bread
- 1 cup Mixed berries
- 1 Banana
- 1 cup Almond milk
- 2 tbsp Chia seeds
- 1 tsp Honey
- 1 tsp Lemon juice
Method
- Cut gluten-free bread into 1-inch cubes, then toast in a 350°F oven for 5-7 minutes, or until lightly browned and crispy.
- In a large bowl, whisk together almond milk, chia seeds, honey, and lemon juice, then let sit for 5 minutes to allow the chia seeds to gel.
- Add mixed berries and sliced banana to the bowl, then stir to combine, the mixture should be well coated with the milk mixture.
- Add toasted bread cubes to the bowl, then toss to combine, the bread should be evenly distributed throughout the fruit mixture.
- Cover the bowl with plastic wrap, then refrigerate for at least 30 minutes to allow the flavors to meld together.
- Just before serving, give the mixture a good stir, then spoon into individual serving dishes, the panzanella should be creamy and sweet with a nice crunch from the toasted bread.
