Ingredients
- 2 cups Plantains
- 1 cup Vegetable oil
- 1 tsp Salt
- 1 tsp Sugar
- 1/2 tsp Black pepper
Method
- Peel 2 cups of plantains and slice into 1/8 inch thick rounds, then heat 1 cup of vegetable oil in a deep frying pan over medium-high heat, about 5-7 minutes, until it reaches 350°F.
- Carefully add the plantain slices to the hot oil, in batches if necessary, and fry until golden brown, about 2-3 minutes on each side, then remove with a slotted spoon and drain on paper towels.
- Sprinkle the fried plantain chips with 1 teaspoon of salt, 1 teaspoon of sugar, and 1/2 teaspoon of black pepper, then serve warm and enjoy, garnished with chopped fresh herbs or scallions, if desired.
- Repeat the frying process until all the plantain slices are used up, then serve the plantain chips warm and enjoy, or let cool completely and store in an airtight container for up to 24 hours.
- To make a dipping sauce, combine 1/2 cup of mayonnaise, 1/4 cup of ketchup, and 1 tablespoon of honey in a small bowl, then mix well to combine, about 1 minute, then refrigerate until ready to use, for up to 1 week.
