Ingredients
- 1 lb Beef strips
- 1/2 cup Peanut sauce
- 1 medium Onion
- 2 inches Ginger
- 3 cloves Garlic
- 2 tbsp Suya spice
- 1 tsp Salt
- 1 tsp Black pepper
- 1/4 cup Vegetable oil
Method
- In a blender or food processor, combine the peanut sauce, onion, ginger, garlic, suya spice, salt, and black pepper, and blend until smooth.
- Heat the oil in a large skillet over medium-high heat until shimmering, about 2 minutes, then add the beef strips and cook, stirring occasionally, until browned, about 5-7 minutes.
- Add the peanut sauce mixture to the skillet and stir to combine, cooking for an additional 2-3 minutes, until the sauce is bubbly and slightly thickened.
- Reduce the heat to medium-low and simmer, covered, for 10-15 minutes, until the beef is tender and the sauce has thickened.
- Use a meat thermometer to check the internal temperature of the beef, which should reach 145°F for medium-rare, 160°F for medium, and 170°F for well-done.
- Let the suya rest for 5-10 minutes before slicing and serving, garnished with chopped fresh herbs, if desired.
- Serve the suya with additional peanut sauce, if desired, and a side of jollof rice or grilled plantains.
- To make the suya more crispy, cook it under the broiler for an additional 2-3 minutes, until browned and crispy on the outside.
