Ingredients
- 1 cup Fava beans
- 1 cup Onion
- 3 cloves Garlic
- 1 tsp Coriander
- 1 tsp Cumin
- 1 cup Parsley
- 1 cup Breadcrumbs
- 1 Egg
- 2 tbsp Olive oil
Method
- Heat oil in a heavy skillet over medium-high until shimmering, about 2 minutes, then add onion and cook stirring occasionally until golden-brown, 6–8 minutes.
- Add garlic and cook for 1 minute, stirring constantly, until fragrant.
- Add fava beans, coriander, cumin, and parsley, and cook for 2 minutes, stirring constantly, until the mixture is well combined.
- In a large bowl, mash the fava bean mixture using a fork or potato masher, until mostly smooth.
- Add breadcrumbs and egg to the bowl, and stir until just combined, being careful not to overmix.
- Using your hands, shape the mixture into small patties, about 1 1/2 inches in diameter and 1/2 inch thick.
- Dip each patty in the beaten egg, then coat in breadcrumbs, pressing the crumbs gently onto the patty to adhere.
- Heat about 1/2 inch of oil in a large skillet over medium-high until shimmering, about 2 minutes, then add the patties and cook, turning occasionally, until golden-brown and crispy, about 4-5 minutes per side.
