Ingredients

  • 4 large thinly sliced Onions
  • 800 g chopped Tomatoes (fresh or canned)
  • 80 ml Olive oil
  • 6 cloves minced Garlic
  • 1 tsp Ground ginger
  • 1 tsp Ground turmeric
  • ½ tsp Ground cinnamon
  • pinch (optional) Saffron threads
  • to taste Salt & black pepper

Method

  1. Heat olive oil in heavy pot → sauté onions over medium-low 15–20 min until soft and golden (do not brown).
  2. Add garlic → cook 2 min.
  3. Add tomatoes, ginger, turmeric, cinnamon, saffron → season → simmer uncovered 30–45 min, stirring occasionally until thick and saucy.
  4. Taste & adjust seasoning — add water 1–2 tbsp if too thick.
  5. Use as base for tagine (add meat/veg later) or blend for smoother sauce.
  6. Refrigerate up to 5 days or freeze — rich Moroccan tagine sauce base.
