Ingredients
- 1 cup All-purpose flour
- 1/2 tsp Baking powder
- 1/4 tsp Salt
- 1/2 cup Granulated sugar
- 1/2 cup Unsalted butter
- 2 Large eggs
- 1 cup Tej
- 1 tsp Vanilla extract
Method
- Preheat oven to 400°F, then prepare a baking sheet by lining it with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, and granulated sugar, until well combined, then add unsalted butter and mix until a crumbly mixture forms.
- Beat in large eggs, one at a time, until well combined, then stir in tej and vanilla extract, until smooth and creamy, about 5 minutes, using an electric mixer or a wooden spoon.
- Transfer the dough to a piping bag, then pipe into small balls, about 1-inch in diameter, onto the prepared baking sheet, leaving about 1-inch of space between each puff.
- Bake for 20-25 minutes, or until golden brown, then remove from oven and let cool on a wire rack for 10 minutes, before transferring to a serving plate or individual plates.
- Dust the tej cream puffs with powdered sugar, then serve warm, which will help the puffs to remain crispy and the flavors to remain vibrant.
