Ingredients
- 2 lbs Pork bones
- 1 lb Chicken breast
- 2 cups Dashi broth
- 1 cup Ramen noodles
- 1 tsp Sesame oil
- 2 tsp Soy sauce
- 1 tsp Mirin
- 1/4 cup Green onions
Method
- Prepare the dashi broth according to the package instructions, then set it aside to keep warm.
- In a large pot, combine pork bones and dashi broth, then bring to a boil and simmer for at least 4 hours, or overnight, to make a rich tonkotsu broth.
- Strain the broth through a fine-mesh sieve into a clean pot, discarding the solids, then bring the broth to a simmer and cook until reduced and rich, about 10 minutes.
- Cook the ramen noodles according to the package instructions, then set aside to keep warm.
- In a large skillet, heat sesame oil over medium-high heat until shimmering, about 2 minutes, then add the chicken and cook until golden-brown and cooked through, about 5-6 minutes per side.
- To assemble the soup, place a portion of the noodles in a bowl, then slice the cooked chicken and place on top, ladling the hot tonkotsu broth over the chicken and garnishing with sliced green onions and grated daikon radish, if desired.
