Ingredients

  • 1 lb Chicken breast
  • 1 cup All-purpose flour
  • 1 cup Panko breadcrumbs
  • 2 Eggs
  • 1 package Udon noodles
  • 4 cups Dashi broth
  • 2 tbsp Soy sauce
  • 1 tbsp Mirin
  • 1 tbsp Sake

Method

  1. Prepare dashi broth according to the package instructions, then set aside.
  2. In a shallow dish, mix together flour, a pinch of salt, and a few grinds of pepper.
  3. Dip each chicken breast into the flour mixture, coating lightly, then into the eggs, and finally into the panko breadcrumbs, pressing gently to adhere.
  4. Heat about 1/2 inch of oil in a large skillet over medium-high until shimmering, about 2 minutes, then add the breaded chicken and cook until golden-brown and crispy, about 3-4 minutes per side.
  5. Transfer the fried chicken to a paper towel-lined plate to drain excess oil, then cut into thin strips.
  6. Cook udon noodles according to the package instructions, then divide among bowls.
  7. Add sliced green onions, grated daikon, and a sprinkle of shredded nori to the bowls, if desired.
  8. Pour the hot dashi broth over the noodles and toppings, then serve the crispy fried chicken on the side or on top of the noodles.
