Ingredients
- 1 pound Boneless, skinless chicken breasts
- 6 Corn tortillas
- 1 cup Canned black beans, drained and rinsed
- 1 medium Diced onion
- 1 medium Diced bell pepper
- 1 cup Shredded cheese, Monterey Jack or Cheddar
- 1/4 cup Chopped fresh cilantro
- 1 cup Salsa roja
- 1/2 cup Sour cream
Method
- Preheat the oven to 400°F (200°C).
- Place the chicken breasts on a baking sheet lined with parchment paper and bake for about 20-25 minutes, or until cooked through.
- While the chicken is cooking, heat a large skillet over medium-high heat and add a small amount of oil, then add the diced onion and cook stirring occasionally until translucent, about 5 minutes.
- Add the diced bell pepper to the skillet and cook stirring occasionally until tender, about 5 minutes.
- Once the chicken is cooked, let it rest for a few minutes before shredding it into bite-sized pieces.
- To assemble the tostadas, place a tortilla on a plate, then top with a spoonful of the shredded chicken, a spoonful of the black beans, a spoonful of the cooked onion and bell pepper, a spoonful of the salsa roja, and a dollop of sour cream.
- Garnish with chopped cilantro and serve immediately.
- Repeat the process for the remaining ingredients.
