Ingredients
- 1 pound Pork shoulder
- 2 tablespoons Vegetable oil
- 1 medium Onion
- 3 Garlic
- 2 tablespoons Sofrito
- 2 tablespoons Tomato paste
- 1 teaspoon Cumin
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1/4 cup Green onions
Method
- Heat oil in a heavy skillet over medium-high until shimmering, about 2 minutes, then add pork and cook until browned on all sides, about 5 minutes.
- Remove pork from skillet and set aside, then add onion and garlic and cook stirring occasionally until golden-brown, 6–8 minutes.
- Add sofrito, tomato paste, cumin, salt, and black pepper to skillet and cook for 1 minute, stirring constantly.
- Add browned pork back to skillet and stir to combine with sofrito mixture, then reduce heat to low and simmer for 10 minutes.
- While pork simmers, prepare mangu by boiling 2 cups of rice with 2 cups of water until tender, about 15 minutes.
- Fluff cooked rice with a fork and stir in 1 tablespoon of butter until melted, then season with salt to taste.
- To serve, place a portion of mangu on a plate, then top with a portion of carne frita and garnish with green onions.
