Ingredients

  • 2 cups Mamey Sapote
  • 1 cup All-purpose Flour
  • 1 cup Granulated Sugar
  • 4 Eggs
  • 1 cup Vegetable Oil
  • 1 cup Confectioners' Sugar
  • 2 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • 1 tsp Salt

Method

  1. Preheat oil in a deep fryer or heavy pot to 350°F (175°C), about 5 minutes, then carefully drop small balls of mamey sapote mixture into hot oil and fry until golden-brown, 3–5 minutes, repeating in batches if necessary.
  2. Drain mamey fritters on paper towels and dust with confectioners' sugar while still warm.
  3. Serve mamey fritters warm, dusting with additional confectioners' sugar if desired, and enjoy as a sweet treat.
  4. In a medium bowl, whisk together flour, granulated sugar, and cinnamon until well combined.
  5. Add eggs to dry ingredients and mix until a dough forms, being careful not to overmix.
  6. Using a small cookie scoop or spoon, drop mamey sapote mixture into hot oil, being careful not to overcrowd the pot.
  7. Fry mamey fritters in batches until golden-brown, 3–5 minutes, then drain on paper towels and dust with confectioners' sugar while still warm.
  8. In a small bowl, whisk together vanilla extract and confectioners' sugar until smooth, then drizzle over mamey fritters just before serving.
