Ingredients
- 1 cup All-purpose flour
- 1 tsp Baking powder
- 1/4 tsp Salt
- 1 cup Granulated sugar
- 1/2 cup Unsalted butter, softened
- 3 Large eggs
- 1 cup Sour cream
- 1 cup Cajeta
Method
- Preheat the oven to 350°F (180°C). Grease a 9x13-inch baking dish and set aside.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, use an electric mixer to beat the sugar and butter until light and fluffy, about 3 minutes.
- Beat in the eggs one at a time, then beat in the sour cream.
- With the mixer on low speed, gradually add the flour mixture and mix until just combined.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 10 minutes.
- Transfer the cake to a wire rack to cool completely.
- Once the cake is cool, use a skewer to poke holes all over the top.
- Pour the cajeta over the cake, making sure it reaches the edges.
- Cover the cake with plastic wrap and refrigerate for at least 2 hours or overnight.
- Before serving, top the cake with whipped cream or a sprinkle of cinnamon, if desired.
