Ingredients
- 500 g Kale (couve galega or curly kale, very thinly sliced)
- 800 g Floury potatoes (e.g. russet)
- 1 large Onion (chopped)
- 3 Garlic cloves
- 80 ml Extra virgin olive oil
- 150 g Chouriço sausage (optional, sliced)
- 2 L Water or light vegetable stock
- to taste Sea salt
Method
- Peel and roughly chop potatoes. In large heavy pot heat 40 ml olive oil. Sauté chopped onion and garlic with pinch of salt until soft and translucent (6–8 minutes).
- Add potatoes and water/stock. Bring to boil, reduce to medium simmer, cover partially and cook 20–25 minutes until potatoes are falling apart soft.
- Mash potatoes directly in pot with potato masher or immersion blender until creamy but still slightly chunky (traditional texture).
- Add very thinly sliced kale (remove thick stems) and sliced chouriço (if using). Simmer uncovered 7–10 minutes until kale is tender but still bright green. Adjust salt.
- Serve piping hot in deep bowls with generous final drizzle of raw extra virgin olive oil on top and crusty bread on the side.
