Ingredients
- 400 g Potatoes (waxy, peeled and thinly sliced)
- 300 g Beef or pork (thinly sliced or diced)
- 2 medium Onions (thinly sliced)
- 2 cloves Garlic (minced)
- 6 large Eggs
- 100 ml Milk or cream
- 80 g Parmesan or Gruyère (grated)
- 2 tbsp chopped Fresh herbs (parsley, rosemary)
- to taste Salt and black pepper
- 3 tbsp Butter or olive oil
Method
- Step 1: Parboil potato slices in salted water for 5–6 minutes until just tender but not soft. Drain and pat dry.
- Step 2: Heat 2 tbsp butter/oil in a large (26–28 cm) non-stick or cast-iron pan over medium heat. Fry potatoes in a single layer until golden on both sides (8–10 min total). Remove half and set aside.
- Step 3: In the same pan, add meat slices and cook 4–5 min until browned. Add onions and garlic, sauté 3–4 min until soft.
- Step 4: Return reserved potatoes to pan. Season everything with salt, pepper, and herbs. Spread evenly.
- Step 5: Whisk eggs with milk/cream, grated cheese, salt, and pepper. Pour evenly over the potato-meat mixture.
- Step 6: Cook on medium-low heat 8–12 min until edges set and bottom is golden (lift edge to check).
- Step 7: Finish under the broiler (grill) 2–4 min until top is puffed and golden (watch carefully to avoid burning).
- Step 8: Let rest 3–5 min, slide onto plate or cut into wedges. Serve hot – hearty Ticinese potato-meat frittata!
