Ingredients
- 1 liter (or grape juice + yeast for fermentation) White wine (dry, high-tartaric acid)
- as needed Water
- small amount for precipitation Optional: potassium bicarbonate
Method
- Note: True cream of tartar forms naturally on wine barrels (lees) → home extraction is limited but possible from high-tartaric wine.
- Use dry white wine with high tartaric acid (or ferment grape juice with wine yeast 2–3 weeks).
- Let wine sit undisturbed in cool place 4–8 weeks → potassium bitartrate crystals (cream of tartar) form on sides/bottom.
- Carefully decant wine → collect crystals → rinse gently with cold water → dry at room temperature or low oven (40 °C).
- Grind dried crystals to fine powder → store in airtight container.
- Alternative: buy cream of tartar raw → or use lemon juice/vinegar as substitute in recipes.
- Makes small amount — natural potassium bitartrate for stabilizing egg whites or baking.
