Ingredients
- 1 block Halloumi cheese
- 2 tbsp Olive oil
- 1 tsp Lemon juice
- to taste Salt
- to taste Pepper
- for garnish Fresh mint leaves
Method
- Preheat a grill or grill pan to medium-high heat, then brush the halloumi cheese with olive oil on both sides, about 1 minute per side.
- Season the halloumi cheese with salt and pepper to taste, then place it on the preheated grill and cook for 2–3 minutes per side, or until golden brown and slightly charred.
- Remove the halloumi cheese from the grill and place it on a serving plate, then squeeze the lemon juice over the top and garnish with fresh mint leaves, if desired.
- To serve, cut the halloumi cheese into slices or cubes, then serve immediately, or let it cool to room temperature and serve within 2 hours, or cover and refrigerate for up to 24 hours before serving.
- For a crispy exterior and a melted interior, grill the halloumi cheese for an additional 30 seconds to 1 minute per side, then remove from the grill and let cool for 1 minute before serving.
- To make a halloumi cheese salad, combine the grilled halloumi cheese with mixed greens, cherry tomatoes, and a drizzle of olive oil and lemon juice, then serve and enjoy.
