Ingredients
- 20–25 kg (yields ≈5–6 liters) Fresh white grapes (Riesling or Muscat style)
- 1 packet Wine yeast
- 1–1.5 kg (for sweetness) Sugar
- 2–3 Campden tablets
- 1 tsp Potassium sorbate
- 500 ml Brandy (optional for fortification)
Method
- Crush grapes into must → add 1 crushed Campden → let sit 24 hours.
- Add yeast → ferment 5–7 days → strain → transfer to carboy.
- Add sugar 200–300 g at a time during fermentation (sweetens and increases alcohol).
- Ferment 4–6 weeks until bubbling slows.
- Optional fortify: add brandy to stop fermentation and boost sweetness/alcohol.
- Add Campden + sorbate → age 3–6 months → bottle.
- Age bottles 6–12 months — sweet white dessert wine for after dinner.
