Ingredients
- 300 g All-purpose flour
- 150–180 ml (room temperature) Water
- ½ tsp Salt
- for dusting Cornstarch or flour
Method
- Mix flour + salt in bowl → add water gradually → stir with chopsticks until shaggy dough forms.
- Knead on floured surface 10–15 minutes until very smooth and elastic (dough should bounce back when poked).
- Cover dough → rest 30–60 minutes at room temp (makes pulling easier).
- Divide into 4 pieces → roll each into 1–2 cm thick rope → coil ropes → cover → rest 15 min.
- For hand-pulled: oil hands/surface → uncoil rope → stretch gently, twisting and slapping against counter until thin (2–3 mm) strands form (practice required; if breaks, shorten rope).
- Alternative cut: roll dough flat to 2 mm thick → dust with cornstarch → fold sheet → cut into thin strips with sharp knife.
- Shake off excess flour → boil in salted water 2–5 min until floating and al dente → drain → rinse cold for stir-fry or serve hot in soup.
- Makes 4 servings — chewy homemade Asian noodles, hand-pulled for authentic texture (no machine needed).
