Ingredients
- 4 Ripe Plantains
- 1/2 cup Vegetable Oil
- 1 medium Onion
- 2 medium Tomato
- 1 tsp Salt
- 1/2 tsp Black Pepper
Method
- Heat oil in a deep frying pan over medium-high heat until it reaches 350°F, about 5 minutes, then carefully add sliced plantains and fry until golden-brown, 3-4 minutes per side.
- Drain the fried plantains on paper towels and set aside.
- In a separate pan, heat 2 tablespoons of oil over medium heat, then add diced onion and cook stirring occasionally until translucent, 5 minutes.
- Add diced tomatoes to the pan and cook, stirring occasionally, until they start to break down and release their juices, about 5 minutes.
- Season the tomato mixture with salt and black pepper to taste, then stir in the fried plantains and cook for an additional 2 minutes.
- Serve the alloco hot, garnished with chopped fresh herbs if desired.
- To make it more substantial, serve with a fried egg or a side of spicy sauce.
