Ingredients
- 4 cups Fish broth
- 1 medium Onion
- 2 cloves Garlic
- 2 medium Carrots
- 2 medium Potatoes
- 1 pound Cod fish
- 2 tbsp Olive oil
- 1 cup White wine
- 2 tbsp Tomato paste
- 1 tsp Salt
Method
- Heat the olive oil in a large pot over medium heat until shimmering, then add the onion and cook until translucent, about 3-4 minutes.
- Add the garlic to the pot and cook until fragrant, about 1 minute.
- Add the carrots and potatoes to the pot and cook until tender, about 10-12 minutes.
- Add the fish broth, white wine, and tomato paste to the pot, and bring to a boil.
- Reduce the heat to medium-low and simmer the soup for 10 minutes, then add the cod fish to the pot and cook until flaky, about 5-7 minutes.
- Season the soup with salt to taste, then serve hot, garnished with a sprinkle of parsley and a squeeze of lemon juice.
- Let the soup cool to room temperature before refrigerating or freezing for later use.
- Use a slotted spoon to remove the fish and vegetables from the pot, then serve with crusty bread for a hearty meal.
- Add a splash of white wine to the soup for added flavor and depth.
