Ingredients
- 4–5 liters (yields ≈500–800 ml molasses) Fresh sugarcane juice (or store-bought 100% pure juice)
Method
- Note: Real molasses is the byproduct of sugar refining → home version is reduced sugarcane juice.
- If using fresh sugarcane: crush stalks → extract juice → filter through cloth.
- Pour filtered sugarcane juice into large wide pot → bring to boil over high heat.
- Skim foam/scum that rises (contains impurities) → reduce heat to medium-low.
- Simmer uncovered 4–8 hours, stirring occasionally → volume reduces dramatically → color darkens to deep brown.
- Continue reducing until syrup reaches 110–115 °C (230–240 °F) or coats spoon thickly and forms soft ball in cold water.
- Remove from heat → let cool slightly → pour into clean glass jars.
- Cool completely → seal → store in cool dark place up to 1 year (or refrigerate).
- Makes 500–800 ml — thick, dark, bittersweet homemade molasses for baking, BBQ sauce, gingerbread.
