Ingredients
- 2 pieces Mochi
- 2 cups Dashi broth
- 1 lb Chicken breast
- 1 cup Spinach
- 1 tsp Sesame oil
- 1 tsp Soy sauce
- 1 tsp Mirin
Method
- Prepare the dashi broth according to the package instructions, then set it aside to keep warm.
- In a large bowl, whisk together flour, a pinch of salt, and a few grinds of pepper, then toss the chicken breast in the flour mixture to coat, shaking off excess.
- Heat sesame oil in a large skillet over medium-high heat until shimmering, about 2 minutes, then add the chicken and cook until golden-brown and cooked through, about 5-6 minutes per side.
- Add the cooked mochi to the warm dashi broth and cook until heated through, about 2 minutes, then stir in soy sauce and mirin.
- Add the cooked chicken to the broth and cook until heated through, about 1 minute, then stir in spinach and cook until wilted, about 30 seconds.
- To assemble the soup, place a portion of the mochi and chicken in a bowl, then ladle the hot broth over the top and garnish with sliced green onions and grated daikon radish, if desired.
