Ingredients
- 1 cup Udon noodles
- 1 lb Chicken breast
- 1 cup Panko breadcrumbs
- 1 Egg
- 2 cups Dashi broth
- 2 tsp Soy sauce
- 1 tsp Mirin
- 1 tsp Sesame oil
Method
- Prepare the dashi broth according to the package instructions, then set it aside to keep warm.
- In a large bowl, whisk together flour, a pinch of salt, and a few grinds of pepper, then toss the chicken breast in the flour mixture to coat, shaking off excess.
- Dip the floured chicken in the beaten egg, then coat in panko breadcrumbs, pressing the crumbs gently onto the chicken to adhere.
- Heat sesame oil in a large skillet over medium-high heat until shimmering, about 2 minutes, then add the breaded chicken and cook until golden-brown and cooked through, about 5-6 minutes per side.
- Add the cooked udon noodles to the warm dashi broth and cook until heated through, about 2 minutes, then stir in soy sauce and mirin.
- To assemble the soup, place a portion of the noodles in a bowl, then slice the cooked chicken and place on top, ladling the hot broth over the chicken and garnishing with sliced green onions and grated daikon radish, if desired.
