Ingredients
- 2 cups Rice
- 1 cup Urad dal
- 2 large Carrots
- 1 cup Peas
- 1 large Onion
- 2 inches Ginger
- 3 cloves Garlic
- 1 tsp Salt
Method
- Rinse 2 cups of rice and 1 cup of urad dal, then soak them in water for at least 4 hours, or overnight, until they are soft and have broken down.
- Drain and grind the rice and urad dal into a smooth batter, using a blender or food processor, adding water as needed to achieve the right consistency.
- Add 2 large grated carrots, 1 cup of peas, 1 large diced onion, 2 inches of grated ginger, and 3 cloves of minced garlic to the batter and stir to combine, then add 1 teaspoon of salt and stir to combine.
- Heat a steamer basket over boiling water, then pour the batter into the basket and steam, covered, for 15-20 minutes, until the idli are cooked through and fluffy.
- Use a knife or spatula to loosen the idli from the sides of the basket, then remove them from the steamer and serve hot with your favorite chutney or sambar.
- To make the idli more tender, you can add a little water to the batter and stir to combine, then steam them for an additional 5 minutes, until they are cooked through and fluffy.
