Ingredients
- 1 tsp Berbere Spice
- 1 cup Onion
- 2 cloves Garlic
- 1 Red Pepper
- 2 tbsp Olive Oil
- 1 cup Cabbage
- 2 Tomato
- 1 Potato
- 1 tsp Salt
- 1/2 tsp Black Pepper
Method
- Heat oil in a large pot over medium-high until shimmering, about 2 minutes, then add onion and cook stirring occasionally until golden-brown, 6–8 minutes.
- Add garlic, red pepper, cabbage, tomato, and potato to the pot. Cook, stirring occasionally, until the vegetables start to soften, about 8 minutes.
- Add berbere spice, salt, and black pepper to the pot. Stir to combine.
- Pour in 2 cups of water and bring to a boil.
- Reduce heat to low and simmer, covered, until the vegetables are tender, about 20 minutes.
- Taste and adjust seasoning as needed.
